The Perfect Lemon Bars


Ok, so over the past month I have been a serious slacker as far as blogging goes. That's the honest truth. I have been so unmotivated to do anything lately. I think it's partially because we have been stinking busy with the Bible conference we went to in Arizona and just the regular day to day outreaching and so on. Today was a very productive day, my husband helped me do all the laundry and clean the house! He even scrubbed the shower for me, what a guy:)

The other day all I wanted to eat was lemon bars, so naturally I looked up a few recipes. Then we ran to the store (just kidding, we drove) got a few of the missing ingredients and smashed back home to make them. The recipe I ended up using was SO EASY, like it was almost too good to be true. And the result, unreal, no really they're divine!

Before I go off and rant some more, lets get down to the nitty-gritty, shall we?
here is the original recipe I didn't really change it much at all.




The Perfect Lemon Bars

1 cup & 2 Tbs all purpose flour, divided
1/2 cup & 2 Tbs powdered sugar, divided
1/2 cup (1 stick) unsalted butter,  melted
1/8 tsp salt
1 cup granulated sugar
1/4 cup lemon juice

Set the oven to 350 degrees. Ready a 9x9 pan with baking spray/ butter/oil (whatever you prefer) if you want you can line the pan with parchment paper to make removal of the bars easier. I didn't because I forgot to buy some (haha)

Crust:
First, grab a medium sized bowl, mix together 1 cup flour, 1/2 cup powdered sugar, melted butter and salt. Mix well with a fork until well combined. Press mixture into pan and cover surface as well as 1/2 or so up the sides. Place in over for 10 minutes. The crust should be a golden brown.

Filling:
While the crust is baking away, grab another bowl. Stir the 2 Tbs flour, sugar, eggs and lemon juice.
Make sure to mix those eggs in well.

Once the crust is done, pour the filling straight on the crust and return to the over for an additional 20-25 minutes. Mine was ready after 20 minutes. To make sure it's ready, shake the pan and if the filling jiggles then it needs more time, if not it is ready!

Allow bars to cool on the counter for 30 minutes, then place them in the fridge until they're completely chilled.

Before serving sprinkle with powdered sugar and cut into squares. TA-DA

Serves 16, or just one if you don't feel like sharing...really they're that good!

God our Healer

Last month my husband decided we were going to do a healing crusade at a park. God has been using him through the gifts of healing for some time now. We both have a burden for the hurt and the broken. We often notice people limping, people wearing a back brace or a cast of any kind. We're on the look out, but especially him. 

If you don't already know when I was five God healed me from Lymphoma. I had a tumor that was pretty large that stretched across my little neck. The doctors were going to operate to remove the tumor, but not before my family and church prayed to God for a miracle! That's exactly what happened. My pastors and church prayed over me and my family laid hands on me and believed God in desperation for a miracle. (Mark 16:18 They will lay hands on the sick and they will recover) Heaven touched earth that night. The next morning when I woke up we went to the hospital for the doctors to operate. They had traced around the tumor with a permanent marker the day before. They were shocked to find that the maker was still there but the tumor was gone! I didn't have to have a surgery, because my God is my healer! The cancer was gone. I believe God can heal anyone, I believe He can raise the dead. He did it in the Bible, so why not now?

So we had our healing crusade and men and women came out that were in need of a miracle. We prayed for one lady who was Hindu, she prayed to ask Jesus Christ into her heart (what a miracle!) then we prayed over her for healing. She had breathing problems and she said she noticed a difference! Another lady had pain throughout her entire body. My husband had her repeat a prayer then prayed over her himself. God touched her as well. Completely healed! There was a man that was touched by God as well. God is still into healing people! What an awesome God we serve!

There was this homeless man my husband invited to come to the crusade. He looked to have pain in his body. He was a grumpy man, all he wanted was food. He didn't want the free gift of healing or salvation that God could give him in a moments time. It really made me sad. I realized in that moment, you have to want it. You have to willing to humble yourself and come to God. Lay down your pride, All He wants is to help you. 

We have also seen people in pain who won't let us pray for them. I think people are afraid of the unknown, what if it doesn't work? What if it doesn't last? What if I look stupid? God tells us to come to Him, He bore our sickness and our brokenness on the cross when He bore our sins. We have to come to Him in humility and in faith to see Him do a miracle. 

I couldn't help think of the woman in the Bible, who had a flow of blood for twelve years. She knew who Jesus was. And she knew if she could just touch the hem of His garment that she would be healed!
She believed, she was humbled and she reached out. You know what Jesus said to her? "Be of good cheer, daughter; your faith has made you well." (Matthew 9:20-22)

Jesus is still into saving, He is still into healing! It brings glory and praise to His name when we declare that He has healed us! If you have been touched by God's healing power, share it! Don't keep it quiet, you can encourage others and build their faith by letting them know! If you need a miracle, cry out to your Creator. He knows your need and He wants you to come to Him.
